The last Roman deity is the moon goddess Luna, sister of the sun god Sol - a Pale Ale as bright as moonlight.
The third Roman deity is the evening star Hesperos, the god of twilight - a traditional Helles, but with a top-fermenting yeast.
When the golden chariot of Sol sinks behind the horizon and the shadows grow longer, his time has come. Hesperos is the evening star, the god of twilight. He is the silent messenger of transition, gently handing the day into the arms of the night.
In the Roman world, his appearance marked the end of work and the beginning of rest and enjoyment. He is the final flare of daylight, the “Golden Hour,” before Luna takes over the sky. A moment of silence, reflection, and cozy togetherness.
For this magical moment of twilight, we drew inspiration from the dark forests of Germania: The Cerevisia Germanicvm.
The base is a classic German Helles – that golden style that sparkles in the glass like the evening star. However, we have added a Roman twist to the tradition: instead of the usual bottom-fermenting yeast, we have fermented this beer top-fermenting.
This trick gives the beer a soul of its own. While it remains a Helles in appearance and malt profile, the top-fermenting yeast brings wonderful fruit esters into play that are reminiscent of banana. A soft, aromatic beer that caresses the palate and perfectly rings in the evening.
Slowly the day comes to an end. The light disappears. Let us soon watch the stars.
